Copycat Recipe: Peanut Butter Perfect Bars

A take on one of our favorite go-to snacks, Perfect Bars! A totally satisfying bar to have on hand but also one that is not-so-perfect on your budget ($2 a pop starts cutting into the coffee budget, ya know?). We whipped up this version in less than 45 minutes and only 15 of that is actual prep, the rest is just time to chilllll. We’ll definitely be back to the kitchen to try to recreate some other flavor combos but for now, we think you’ll be totally satisfied with these. Get ready to stock your fridge and freezer with on-the-go perfect bars and snacks for the week.

Prep Time: 15 minutes

Freezer Time: 30 minutes

Yields: ~8 perfect bars

Ingredients:

1 cup of peanut butter (I try to buy one without palm oil for the environment – learned this from @AbbysFoodCourt)

1 cup oats (ground into flour)

1/3 cup maple syrup

1/2 cup coconut flour

1/4 cup almond milk

1 tsp vanilla

~1/2 sprinkle sea salt

Dark chocolate chips to top!

Directions:

Line baking sheet or 8×8 pan with wax or parchment paper. Thoroughly mix all ingredients (except chocolate chips) into large bowl. You might need to use your hands to combine well.

Spread mixture onto pan and spread evenly ~1 inch thick. Top with chocolate chips as desired! Then place pan into freezer for ~ 30 minutes to set.

Slice into bars or squares and wrap in parchment. Store in the fridge or freezer and you’re…perfect!
